Coconut Lentil Soup

1 large red onion – chopped
2 TB garlic – chopped
1 inch fresh ginger – minced/chopped
2 small chilis- chopped or 1 tsp red pepper flakes
1 TB cumin
1 TB coriander
1 TB allspice
1/2 tsp Turmeric

2 TB oil

1 cup lentils
1 boullion (chicken, beef or veg)
1 large can diced tomatoes
1 can + 1 cup water
1 cup basmati rice

1 can coconut milk
*fresh cilantro chopped

1. Sautee onion, garlic, ginger chili and spices in oil for a few minutes.
2. Add 1 cup of water and bring to a boil
3. Stir pot and add boullion and allow to dissolve.
4. Stir pot and add lentils, stir, add tomatoes and 1 large can of water, stir.
5. Add rice and stir.
6. Bring back to a boil and then cover.  Lower heat immediately to med-low.
7. Let cook about 30 minutes.
8. Stir in coconut milk and optional cilantro.
